Ingredients

1 1/2 cups graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

16 oz cream cheese, softened

1/2 cup granulated sugar

1 tsp vanilla extract

2 large eggs

1/4 cup sour cream

1 tbsp lemon juice

2 cups fresh or frozen blueberries

1/3 cup granulated sugar

1 tbsp cornstarch

1/4 cup water

1 tsp lemon zest

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare the crust by combining graham cracker crumbs, sugar, and melted butter. Press into a tart pan and bake for 10 minutes.
  2. In a bowl, beat cream cheese until smooth. Add sugar, vanilla extract, and eggs one at a time. Stir in sour cream and lemon juice, then pour over the cooled crust.
  3. Bake at 325°F (163°C) for 25-30 minutes. Cool completely, then refrigerate for at least 3 hours.
  4. Cook blueberries, sugar, cornstarch, water, and lemon zest over medium heat until thickened. Let cool slightly, then spread over the cheesecake.
  5. Chill before serving. Enjoy!
