Ingredients

  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 cup cherry pie filling
  • 1/2 cup fresh cherries, pitted
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream, cold
  • 1/4 cup dark chocolate, melted
  • Fresh cherries for garnish

Instructions

  1. Preheat oven to 350°F and prepare a 10×15-inch baking sheet with parchment paper.
  2. Beat eggs and sugar for 5-6 minutes until fluffy. Fold in flour, cocoa, and salt. Add vanilla.
  3. Spread batter on the sheet and bake for 10-12 minutes.
  4. Roll cake in parchment paper and let it cool.
  5. Beat cream cheese, powdered sugar, and vanilla until smooth. Fold in whipped cream.
  6. Unroll cake, spread filling, add cherry filling, and re-roll.
  7. Drizzle with chocolate and garnish with cherries.

Notes

Roll the cake while warm to prevent cracking. Chill before slicing for cleaner cuts.
