Ingredients

Crust:

  • 1 1/2 cups chocolate chip cookie crumbs
  • 1/4 cup melted butter

Filling:

  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup mini chocolate chips

Topping:

  • 1/2 cup chocolate chips, melted
  • Whipped cream

  2. For the filling, beat cream cheese and sugar until smooth. Add vanilla, then eggs one at a time, mixing just until combined. Fold in mini chocolate chips.
  3. Pour filling over the crust in the pan.
  4. Bake for 50-55 minutes until the center is slightly jiggly.
  5. Turn off oven and cool cheesecake inside with door slightly open for 1 hour. Then refrigerate for 4 hours or overnight.
  6. Decorate with melted chocolate drizzle, whipped cream, and extra chocolate chips before serving.

Notes

  • Avoid over-beating the batter to reduce the chance of cracks.
  • Gradual cooling in the oven helps prevent cracks.
  • For a gluten-free version, use gluten-free chocolate chip cookies for the crust.
