Ingredients

Crust:

  • 1 1/2 cups chocolate chip cookie crumbs

  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup mini chocolate chips

Topping:

  • 1/2 cup chocolate chips, melted
  • Whipped cream
  • Extra chocolate chips

Instructions

  1. Preheat oven to 325°F (163°C). Prepare crust by mixing cookie crumbs with melted butter and pressing into a 9-inch springform pan. Bake for 10 minutes.
  2. For the filling, beat cream cheese and sugar until smooth. Add vanilla, then eggs one at a time, mixing just until combined. Fold in mini chocolate chips.
  3. Pour filling over the crust in the pan.
  4. Bake for 50-55 minutes until the center is slightly jiggly.
  5. Turn off oven and cool cheesecake inside with door slightly open for 1 hour. Then refrigerate for 4 hours or overnight.
