How to Make Chocolate Pecan Turtle Clusters
Step 1: Prep the Pecans
Spread the pecan halves on a parchment-lined baking sheet and toast them in a preheated oven at 350°F (175°C) for about 5-7 minutes. This step is optional but highly recommended to bring out the deep nutty flavor of the pecans. Let them cool while you prepare the caramel.
Step 2: Melt the Caramel
In a microwave-safe bowl, combine the caramel candies and heavy cream. Microwave in 15-second intervals, stirring between each, until the caramel is completely melted and smooth. This should take about 1-2 minutes total. Be careful not to overheat.
Step 3: Assemble the Clusters
On a parchment-lined baking sheet, arrange small piles of toasted pecans, roughly 3-4 pecans per pile. Spoon about 1 teaspoon of the melted caramel over each pecan pile. Let them sit for a few minutes to set slightly.
Step 4: Melt the Chocolate
In another microwave-safe bowl, melt the semi-sweet chocolate chips in 15-second intervals, stirring in between, until smooth. This usually takes about 1-2 minutes.
Step 5: Top with Chocolate
Spoon a generous amount of melted chocolate over each caramel-pecan cluster, spreading it out a little to cover the caramel layer completely. If using, sprinkle a tiny bit of sea salt on top for extra flavor.
Step 6: Let Them Set
Allow the clusters to sit at room temperature or refrigerate for about 15-20 minutes until the chocolate hardens. Then, they’re ready to enjoy!
