Ingredients

  • 2 cups chocolate cookie crumbs
  • 1/2 cup melted butter
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup melted chocolate
  • 1/2 cup heavy cream
  • 1 cup chocolate chips or chopped chocolate
  • Whipped cream, for garnish
  • Pecans or chopped nuts (optional)

Instructions

  1. Preheat oven to 325°F and prepare a springform pan.
  2. Combine cookie crumbs and melted butter; press into pan for crust.
  3. Beat cream cheese and sugar until creamy; add sour cream and vanilla.
  4. Add eggs one at a time, then fold in melted chocolate.
  5. Pour filling over crust; bake for 55-65 minutes.
  6. Cool in oven with door cracked open, then refrigerate for at least 4 hours.
  7. Prepare ganache with heated cream and chocolate chips; pour over cheesecake.
  8. Top with whipped cream, pecans, and extra chocolate as desired.

Notes

For the best results, allow cheesecake to chill overnight. Prevent cracking by cooling slowly and avoiding over-mixing.
