How to Make Guava Coffee Cake
Step 1: Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan to prevent sticking.
Step 2: In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. This will take about 2-3 minutes with a hand mixer.
Step 3: Add the eggs one at a time, beating well after each addition. Then, mix in the vanilla extract.
Step 4: In another bowl, whisk together the flour, baking powder, baking soda, and salt.
Step 5: Add half of the dry ingredients to the butter mixture, then add the guava juice and sour cream. Mix until just combined, then add the remaining dry ingredients. Be careful not to overmix.
Step 6: If using guava jam, spoon small dollops into the batter and gently swirl them in for added bursts of flavor.
Step 7: Pour the batter into the prepared pan and smooth the top. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
Step 8: Let the cake cool for 10 minutes in the pan before transferring it to a wire rack to cool completely.
