Ingredients
2 cups all-purpose flour
1 ½ cups sugar
1 teaspoon baking soda
½ teaspoon salt
3 large eggs
1 cup crushed pineapple with juice
1 cup chopped pecans
½ cup vegetable oil
1 teaspoon vanilla extract
Instructions
- In a large bowl, whisk flour, sugar, baking soda, and salt.
- In another bowl, beat eggs, then add pineapple, oil, and vanilla. Mix well.
- Combine wet and dry ingredients, fold in pecans.
- Pour batter into greased 9-inch pans. Bake at 350°F for 25–30 minutes.
- For frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla.
- Frost the cake, decorate with pineapple and pecans. Chill, slice, and serve!
Notes
For a fresh twist, try using fresh pineapple. Store leftovers in the fridge to keep the cake fresh.
