Strawberry Drip Cake

How to Make Strawberry Drip Cake

This cake comes together in several steps, from baking the fluffy cake layers to assembling and decorating with a smooth buttercream and stunning pink glaze. Follow these steps to create a perfect strawberry masterpiece.

Step 1: Bake the Cake Layers

  1. Preheat your oven to 350°F (175°C). Grease and line three 8-inch cake pans with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, beat the butter and sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Alternate adding the dry ingredients and milk to the butter mixture, beginning and ending with the dry ingredients. Mix in the strawberry puree until just combined.
  5. Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool completely before assembling.

Step 2: Prepare the Strawberry Filling

  1. In a small saucepan, combine the chopped strawberries, sugar, cornstarch, and lemon juice.
  2. Cook over medium heat, stirring constantly, until the mixture thickens. Remove from heat and let it cool completely before using.

Step 3: Make the Strawberry Buttercream Frosting

  1. In a large bowl, beat the butter until smooth and creamy.
  2. Gradually add powdered sugar, beating well after each addition.
  3. Mix in the strawberry puree and vanilla extract, followed by heavy cream as needed to reach a smooth and spreadable consistency.

Step 4: Assemble the Cake

  1. Place one cake layer on a serving plate. Spread a layer of strawberry filling over it, then a layer of strawberry buttercream. Repeat with the second cake layer.
  2. Place the final cake layer on top and spread a thin crumb coat of buttercream over the entire cake. Chill for 30 minutes, then frost with the remaining buttercream for a smooth finish.

Step 5: Prepare and Apply the Pink Drip

  1. Melt the white chocolate with heavy cream in the microwave in 20-second intervals, stirring until smooth.
  2. Add pink food coloring if desired, and let it cool slightly before dripping it down the sides of the cake using a spoon or piping bag.

Step 6: Decorate and Serve

  1. Top the cake with fresh strawberries, raspberries, and crushed freeze-dried strawberries for extra texture and flavor.
  2. Chill the cake for 15-20 minutes to set the drip. Slice and serve!
