How to Make Strawberry Drip Cake
This cake comes together in several steps, from baking the fluffy cake layers to assembling and decorating with a smooth buttercream and stunning pink glaze. Follow these steps to create a perfect strawberry masterpiece.
Step 1: Bake the Cake Layers
- Preheat your oven to 350°F (175°C). Grease and line three 8-inch cake pans with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, beat the butter and sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Alternate adding the dry ingredients and milk to the butter mixture, beginning and ending with the dry ingredients. Mix in the strawberry puree until just combined.
- Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool completely before assembling.
Step 2: Prepare the Strawberry Filling
- In a small saucepan, combine the chopped strawberries, sugar, cornstarch, and lemon juice.
- Cook over medium heat, stirring constantly, until the mixture thickens. Remove from heat and let it cool completely before using.
Step 3: Make the Strawberry Buttercream Frosting
- In a large bowl, beat the butter until smooth and creamy.
- Gradually add powdered sugar, beating well after each addition.
- Mix in the strawberry puree and vanilla extract, followed by heavy cream as needed to reach a smooth and spreadable consistency.
Step 4: Assemble the Cake
- Place one cake layer on a serving plate. Spread a layer of strawberry filling over it, then a layer of strawberry buttercream. Repeat with the second cake layer.
- Place the final cake layer on top and spread a thin crumb coat of buttercream over the entire cake. Chill for 30 minutes, then frost with the remaining buttercream for a smooth finish.
Step 5: Prepare and Apply the Pink Drip
- Melt the white chocolate with heavy cream in the microwave in 20-second intervals, stirring until smooth.
- Add pink food coloring if desired, and let it cool slightly before dripping it down the sides of the cake using a spoon or piping bag.
Step 6: Decorate and Serve
- Top the cake with fresh strawberries, raspberries, and crushed freeze-dried strawberries for extra texture and flavor.
- Chill the cake for 15-20 minutes to set the drip. Slice and serve!
