Step 1: Prepare the Crust
- Preheat your oven to 325°F (160°C).
- Mix the chocolate cookie crumbs with the melted butter in a bowl until well combined.
- Press the mixture into the bottom of a 9-inch springform pan to create an even layer. Chill in the fridge while preparing the filling.
Step 2: Make the Filling
- In a large bowl, beat the softened cream cheese and sugar together until smooth.
- Add the heavy cream and mix until combined. Then, beat in the eggs one at a time, ensuring each is fully incorporated.
